The Ritz-Carlton, South Beach Appoints New Culinary Leaders

The Ritz-Carlton, South Beach is thrilled to announce the appointment of two new members of the culinary staff at the glamorous property – Diogo Porto as Executive Chef and Nitin Bali as Executive Pastry Chef. With the addition of these leaders, The Ritz-Carlton, South Beach will usher in exciting changes and additions across the robust culinary experiences the hotel is known for.

 

A member of The Ritz-Carlton family for more than a decade, Porto joins The Ritz-Carlton, South Beach as Executive Chef from his previous Executive Chef role at the prestigious Ritz-Carlton, Lake Tahoe and with vast experience directing culinary experiences within luxury hospitality environments. He previously held positions at global locations including The Ritz-Carlton, Doha in Qatar; The Ritz-Carlton, Vienna in Austria; The Ritz-Carlton, Abama in Spain; and The Ritz-Carlton, San Juan in Puerto Rico.

 

Porto also brings the expert perspective he earned from training at esteemed culinary institutions such as Restaurant Aqua from 3 Michelin Star Chef Sven Elverfeld at The Ritz-Carlton, Wolfsburg and Restaurant MB from Michelin Star Chef Martin Berasategui at The Ritz-Carlton, Abama.

 

Porto favors simple, seasonal ingredients and fresh herbs which he can pay respect and homage to through the menus he crafts. Originally from Portugal, Porto was classically trained in French culinary techniques and aspires to blend his Mediterranean upbringing, his extensive travels, and his formal education in his delectable culinary creations for The Ritz-Carlton, South Beach.

Executive Pastry Chef Bali joins The Ritz-Carlton, South Beach from The Langham Hotel and will oversee the pastry operations for the entire property. He brings with him a decade of experience in pastry arts at top luxury hotels, including several roles within The Ritz-Carlton properties nationally (Atlanta, Chicago) and internationally (Doha, Qatar). With Bali at the helm, The Ritz-Carlton, South Beach will craft extraordinary, unique pastry offerings across all its outlets and in-room dining. 

 

Bali is recognized for his inventive pastry creations and his love for chocolatiering, and has been known to create unconventional yet delicious pairings like truffle with chocolate. Bali’s work is inspired by his love for nature, and all his whimsical creations are born from his respect and awe for the natural world and the abundant ingredients that come from it.

Originally from India, Bali grew up around food and found his passion for pastry arts at an early age. This love drove him to earn a Bachelor’s degree in Hotel and Tourism Management and eventually enroll in Long Beach City College’s Baking and Pastry program. Throughout his career, Bali has adopted a modern approach to creating desserts with a focus on seasonal flavors and classic techniques in his work.
